Rubio’s began when founder Ralph Rubio tasted his first fish taco in Baja, California. It won’t take more than one stop at Rubio’s to make this taco stand an instant favorite. You’ll feel like you just took a stroll on the boardwalk in Baja and ended up at a little beachfront stand, munching down on some classic Mexican dishes for a reasonable price. There’s nothing fancy about Rubio’s, but that’s part of its lasting charm.
